Back on topic.

We often tend to forget them, because the nutritional propaganda tells us to bet on the color in our food (#conspirationnism lol). And it’s a shame because they have many things to offer us.

Of course, we do not talk about white foods but white fruits and vegetables, do not make me say what I did not say, I see you behind your screen with your slice of industrial buttered bread, fries with double-fat white cheese and vanilla ice cream !! I’m kidding, of course, you do what you want anyway, but not all at the same time, you’ll be sick. 🤢

Indeed, white fruits and vegetables do not have to feel complexed; they are treasures for our health too: Anti-cancer, heart health, intestines, beautiful skin asset, hair, and nails, that’s what they have to offer you!

Allicin

In garlic or onion, for example, allicin is a natural anti-cancer. It also has antifungal and antibacterial properties.

Vitamin D

Very few foods contain vitamin D. White mushrooms in general, and button mushrooms, in particular, brings us free vitamin D. Besides, mushrooms are also full of proteins. I put it here, in case of …

Group B vitamins

Necessary for neuromuscular function, skin and hair/nails. If you want to be handsome and smart, eat white fruits and vegetables.

Potassium

It is involved in the regulation of blood pressure, and therefore reduces the risk of stroke. You find a lot in bananas for example.
It also helps maintain proper hydration of body cells. Now we know that hydration is essential for the general health and the beauty of the skin in particular.

nice mushrooms which do not know their gruesome destiny! 🍄

Warm salad of (almost) spring

For 2-3 servings

2 medium-sized potatoes
1 cute cauliflower (“but I do not like cauliflower” … put broccoli or salsify!)
3 green onions (I cheat, it’s white AND green, but it’s better for this recipe)
1 block of sesame and almond smoked tofu by Taifun (or any other smoked tofu, but in this case, add 1 tbsp sesame seeds that will be roasted with hazelnuts, see recipe below)
1 handful of button mushrooms
1 handful of hazelnuts from Piedmont
1 handful of round radishes
1/3 bunch of parsley
2 handfuls of lamb’s lettuce
1 tbsp. hazelnut oil
Salt, Madagascar pepper

RECIPE

Wash and cut the potatoes into small cubes (without peeling them if they are organic), separate the cauliflower into florets.

In your steamer, arrange the potatoes with the cauliflower florets on top of them, and cook for 5-7 minutes maximum depending on the device. Regularly check the cooking, everything must remain al dente. Yes, we are pragmatic today. Since you have cut the potatoes in small dice, all these little buddies will have the same cooking time, so let’s take the opportunity. Keep warm.

Cut the tofu into small cubes and cook in a frying pan over medium-high heat, possibly with a drop of olive oil, for 4-5 min. Keep it warm too.

Mince the green onions, parsley, cut radishes, and mushrooms into thin slices, set aside.

Crush the hazelnuts coarsely (but don’t need to curse them either) and roast them in a hot skillet for a few seconds, Set aside. Note: It’s time to put your sesame spoon to roast with hazelnuts if your tofu is plain smoked tofu.

Plate in the process of arranging, but you see, even if you do not have all the ingredients, you can still enjoy a nice meal.

Presentation

In your most beautiful soup plate or shallow dish, the one for Sundays, because we have style: arrange a lovely bed of lamb’s lettuce (corn salad? I’m sure you know what I mean, it’s my French, sometimes it’s difficult to translate. Btw, thanks for your patience reading me! I love you 🤟🏻).

Add some still hot diced potatoes and some pieces of cauliflower (which you will have a little more separated), a few slices of mushrooms and radish, finish with warm tofu, green onions, parsley, and hazelnuts.

Sprinkle with a dash of hazelnut oil, salt, and pepper.

I often hear that healthy cooking is tasteless, boring, that it is not sexy.

However, here’s a great health moment, but above all of the tasting, love, bold and beautiful (you love my smart references, I know, ed.), all in synergy, and that will make you smile and energized. And we will not have done much, 10-15 min of preparation from beginning to end.

It is in these moments that we are happy with ourselves, glad to be in harmony with our body and mind. This is the real the culinary orgasm: greedy, crunchy, flavor, no guilt after, a ton of energy the next hours or the following day to get up in great shape, I will not tell you more if it is: make this f*n’ recipe! Your taste buds will be in joy, and your body and your mind will thank you.

A little clue to the next article, “A healthy mind in a healthy body,” this quote is not mine of course but of the buddy Juvenal a few centuries ago, but still relevant. Our health is our responsibility. But not too much spoil. See you next week.

Energizing XO 🥥

Do not tell me it does not makes you mouth-watering, or I come to your house to make this recipe myself, to put it in your mouth.
