(hum, move from Youporn to Youtube and you will see that for you either, lol). I found a cute American recipe of “carrot energy balls” from June 2016, which I, obviously, had fun reproducing.

I already know well this type of snacks; I make them very often with what I have in my kitchen drawers. I liked certain things in this recipe, but not others (the texture, in particular, ed), so I had fun creating my own recipe for “carrot energy balls,” french version, and of course: rock n’ roll, like everything on this blog. 🤘🏻

Here is my version of this cute snack very well known across the Atlantic, which is starting to come in Europe, for the best of your taste buds and vitamins.

Carrots

An apple every day keeps the doctor away, but a carrot daily, health constantly!

Obviously, the first asset of the carrot is beta-carotene, A.K.A vitamin A, your best anti-wrinkle, and anti-aging weapon, both best for your skin and cells. Do you want to stay young and beautiful? Just like Bugs Bunny: eat carrots! (no double entendre in this sentence, lol, ed).

But that’s not all, rich in fiber, they also contain vitamin C, B1, B2, B3, B6, B9, C, E and K, and minerals like potassium, manganese, iron, calcium and phosphorus. Which make them allies for your bones and teeth (phosphorus + vitamin A), your skin, your heart, your kidneys and your eyesight. Isn’t it great?

Whether it is eaten as an early vegetable, a seasonal, or kept from the previous season, we can have it all year round.

Coconut-carrot energy balls

For about 15 bites

3 carrots (about 3 normal size carrots in organic)
10 Medjool dates (or a little more if you prefer a sweeter taste)
1 tbsp cashew puree (or oilseed puree of your choice)
3 tbsp grated coconut + a little more for decoration
4 tbsp almond powder
2 tbsp oatmeal

2 pinches of vanilla powder
1 pinch of cinnamon powder
1 pinch of powdered ginger

RECIPE

Put the oatmeal in the bowl of a food processor to ground it into a powder.
Cut the carrots into pieces, take out the date pits, and pour them over the grounded oats in the bowl of the food processor.

Then arrange the rest of the ingredients, namely the cashew puree, the grated coconut, the almond powder, the vanilla, the cinnamon, the ginger, and ground everything by pulses; otherwise the pieces of carrots not mixed will go up. If necessary, open the blender bowl, stir with the handle of a wooden spoon and mix again.

I like it when there are a few small pieces of carrots left, but you do what you want, it’s your recipe.

Using a TBSP American measuring spoon (tablespoon) or a spoon of your choice: make a small ball, roll it in the palm of your hand, then in the coconut powder and place it on a presentation dish. Do the same with the entire preparation.

Once the bites are successfully made, place them in the refrigerator for at least an hour before eating them (but if you do it before, I won’t tell anyone!).

You can keep them about 3 days in the fridge.

Enjoy!

Bravo to you, in 15 minutes including dishes, you have achieved a feat: making the carrot a great dessert-snack.
XO 🥕

Hello, young Padawan Recently, I had fun browsing the net a bit, maybe like you (or not …). And it was not fruitless!
