It’s now or never and you know it. Tomatoes and peppers, our faithful summer buddies are quitting the stage to let the pumpkins be the queens on the dance floor of your stomach.

 

So you understood over the articles that you had to try as much as you could to not cook veggies and fruits or as little as possible. Thereby, besides keeping the vitamins, you have a little more time to do something else. And time is important (yes it’s money too).

 

We will also add two or three cute ingredients, so the recipe is rich in nutrients but also tastes great and brings us health benefits to be on top of the tops.

 

 

 

Nutritional yeast

Nutritional yeast is a microscopic mushroom, a living substance that promotes the development of good bacteria to help strengthen the intestinal balance and the immune system. It also helps to have healthy hair and nails.

 

It is an excellent source of vegetable protein with all the essential amino acids that our body needs. It contains calcium, copper, iron, magnesium, phosphorus, potassium, sulfur and zinc.

 

It is also the most complete natural intake of vitamins B group, which care about the balance of nerve and blood cells, the metabolism of proteins, fats, sugars, and cellular respiration.

 

 

 

 

basil

Basil is a source of vitamin A, C, K, it has lots of antioxidants and is a natural anti-inflammatory too. It is anti-bacterial and excellent for fighting bloating, indigestion or heartburn.

 

These are excellent reasons to use and abuse basil. This is how your faithful servant eats his pasta with basil #psychopath :

SWEET PEPPER

Rich in antioxidants, it contains vitamins A, B2, B6, potassium, and calcium. It limits the risk of cancerous tumors especially on the intestine and the colon, and it is rich in fiber.

 

Sweet peppers are also among the best sources of vitamin C, so a single red pepper covers 100% of our vitamin C needs.

 

The vitamin C content is twice as high in red pepper than in green, but green pepper contains 5 to 8 times flavonoids and antioxidants than red, so you have to vary the pleasures! Don’t forget the yellow one, it is great too !

 

 

 

TOMATO, Benjamin Button’s ally

If you want to keep your skin fresh, plump and bright, use and abuse it.

Rich in Vitamin A, C, and E, the famous combo recommended by all dermatologists (B vitamins too, there also is B2 and B6 in the tomato), a tomato a day during the season will be your best anti-aging tip, for your skin but also for your cells. One cannot go without the other.

 

It is also an anti-cancer, an excellent asset for your cardiovascular health and a happiness for your intestines. So go ahead, enjoy your tomatoes!

vegetable hash with tomatoes and peppers, the last of the summer.

 

For 2 servings

 

3 ripe tomatoes
2 red peppers
8 basil leaves
A handful of black olives
2 cups of pasta (with or without gluten – 130g)
4 shallots
1 clove garlic
1 block of tofu (here I chose the “black forest” by Taifun, it’s a regular smoked tofu)
2 tbsp. nutritional yeast flakes
1 tsp. oregano
2 tsp. of Provence herbs (if you don’t have it you can simply use 3 thyme leaves and one bay leaf)
2 tbsp. olive oil
1/4 cup of water (5 cl)
salt, Madagascar pepper

 

 

 

RECIPE

 

In a saucepan of unsalted boiling water, Cook the pasta according to the pack instructions but reduce the cooking time by one minute. Set aside.

 

Peel (do I really have to say that you have to peel it ? lol) and finely chop the shallots, cut the peppers into cubes and cook them in a hot wok with the olive oil for 5 minutes over medium heat, stirring regularly.

 

Meanwhile, cut tomatoes and tofu into small cubes and pour them into the wok. Add oregano and herbes de Provence, and cook for another 5 minutes over medium-high heat, stirring regularly.

 

Add the water, black olives, pasta, stir briefly and cut the heat immediately. Add salt and pepper according to your taste.

 

When the boiling has stopped in the pan and it is possible to touch the preparation without burning, incorporate garlic freshly squeezed. Stir to distribute evenly.

PRESENTATION

 

In a deep plate, arrange this tasty mixture with a bold and beautiful attitude, then add a tablespoon of nutritional yeast flakes and 4 basil leaves on each plate, even more, if you are a basilisk maniac just like me. I can put 8 sheets per plate, and tell myself that there is still not enough. #psychopathforreal

 

Serve this wonderful dish with a portion of raw vegetables of your choice. This time I made a tomato salad with more basil than tomatoes, but you could also make a little green salad and eat it with it.
Sometimes I add some spaghetti of raw zucchini to this plate, it’s absolutely delicious with this recipe.

This ends the peppers and tomatoes season, but no worries my little padawan, nature is well done and we’ll have plenty of nice arrivals for your taste buds in the next weeks.
