I have received several requests for apple cake recipes here and on Instagram, so you will have not one but two recipes, one today and another very soon, just because I love apples, too.

 

Raw, cooked, in fruit salad, in cubes, finely grated, in julienne, in compote, or in gourmet desserts, everything suits the apple; apples are magical!

 

So here we go for a divine apple cake recipe to make with the kids, as its simplicity is suitable for the youngest — under the supervision of mom or dad, of course.

Autumn spices apple cake.

3 eggs

2/3 cup of sugar

1 cup of flour

3 tbsp of cornstarch

1 pinch of salt

1 tsp of baking powder

1/4 cup of cold melted butter + a nut to butter the mold

1/3 cup of fresh cream

1 cap of rum

1 tbsp medium sized organic apples (or 2 large)

3 tsp of cinnamon

1/2 tsp of vanilla powder

– 1 cake mold –

 

 

 

Recipe

Preheat the oven to 329°F.

Wash and peel the apples, then cut them in half to remove the core and stems.

 

In a large terrine, foam the eggs with the sugar using a whisk, then add the other liquid elements, namely cream, melted butter, and rum. Mix well.

 

Then add the powdery elements: flour, cornstarch, yeast, cinnamon, vanilla, and a pinch of salt, then mix again until you obtain a smooth dough. Set aside.

 

Cut the apple halves into large slices, then each thick disk obtained into tiny cubes, by hand or using a “dicer“.

 

Butter the cake mold.

 

Stir the diced apples with the dough, pour the mixture into the mold, and bake. The cooking time varies depending on the oven’s power, between 22 and 30 minutes. Check after 20 minutes of cooking with a fine knife, which should come out clean; otherwise, continue cooking.

 

Unmold for about fifteen minutes after removing from the oven.

Presentation

In your prettiest dessert plates, present a few slices of this lovely cake, which will perfume your entire kitchen.

Several solutions for hot drinks. A good Christmas tea (there are excellent ones at “les jardins de Gaïa”), this little hot cocoa, a good sobacha, a golden milk, or even a “hot carob“.
